Who are you guys?
Possum Bottom Farms ® was founded in 2012 by John and Susan Lawton. Located on 67 acres bordering the Sequatchie River near Whitwell, Tennessee, the farm sits in the geographic center of the beautiful Sequatchie Valley. John, a retired Telecommunications Engineer, was raised in rural Georgia on his family farm and has had a life long passion for organic farming. Susan is a retired retail Merchandiser hailing from New Martinsville, West Virginia. Both love nature, farming and great food. Since it's humble beginnings, Possum Bottom Farms has grown to be Tennessee's largest gourmet mushroom farm. We offer 11 strains of farm fresh gourmet mushrooms year round at farmers markets in central and east Tennessee.
Where do you get your mushrooms?
All of our mushrooms are farmed here in Marion County, Tennessee, from commercial grade cultures. We do not offer, nor do we buy/resell wild foraged mushrooms. Similarly, unlike many mushroom farms we do not use mushroom blocks or artificial mushroom producing logs sourced from China. All of our products are grown on locally obtained wood substrates. All of our cultures are maintained in our onsite lab ensuring absolute quality control of our products. Some mushroom strains are grown outdoors and are seasonal. Most are grown year round indoors in climate controlled conditions making our harvests consistent and predictable. We typically have 8-10 varieties of mushrooms available every week, year round.
How are your mushrooms grown?
We use only locally obtained wood waste products such as sawdust, wood chips, and logs for mushroom cultivation. Although we are not Certified Organic, rest assured all of our methods and processes are 100% organic from start to finish. Mushrooms will have it no other way! Beyond organic, we call our process "full circle farming". Here's how it works: We take locally obtained wood waste products, such as sawdust, wood chips and natural logs, then introduce specific fungi. We produce bountiful harvests of delicious gourmet mushrooms year round. Then, we use Vermiculture (worms) to break down the remaining substrate into a rich compost that we use in our greenhouse, garden and raised beds to produce vegetables, fruits and nuts, thus completing the circle.
What makes your mushrooms so delicious?
With mushroom cultivation timing is everything. Every mushroom we grow is picked fresh at the peak of flavor and offered direct to our farmers market customers in hours, not days or weeks! Knowing when to harvest is crucial because it ensures not only the best shelf life and texture, but also ensures the complex sugars and proteins have developed into mushroomy goodness! When we say fresh we're talking farm fresh, not picked on Monday and brought to the market on Saturday, or grocery store "fresh" mushrooms that are picked when they are immature, then bounced down the road on a truck for 1000 miles (or worse, coming from China), then held in a cooler for a week or two before they are made available to you. Our mushrooms are available directly to you from the farmer's own (gloved) hands no more than 18 hours after harvest! When it comes to gourmet mushrooms there simply is no substitute for fresh!
What other products do you offer?
In addition to our fresh mushrooms we offer fresh ground shiitake, oyster, golden oyster, chestnut and lions mane mushroom powders. Our powders are made weekly in small batches from any excess mushrooms we grow. There's only one ingredient in our mushroom powder: MUSHROOMS! No preservatives, no fillers and no salt! To make our powders we air dry fresh mushrooms to preserve the flavor and nutritional content. Then, we grind and sift to the consistency of flour. The sifted powder is immediately bottled and hermetically sealed for freshness. Like our fresh mushrooms, Possum Bottom Farms ® gourmet mushroom powders contain naturally occurring glutamic acid, or glutamate. This non-essential amino acid stimulates umami, your 5th sense of taste, enhancing savory, brothy flavors. Our powders are a nutrition packed, flavor-packed addition to eggs, soups, stews, rice, popcorn, veggies, grilled meats, roasts, and fish.
